Some-bunny will love these Easter-themed desserts
For Halloween, we have witches’ broomsticks made out of Reese’s cups and pretzel sticks and orange cupcakes decorated as the face of a pumpkin. For Christmas, we have sugar cookies―stars, trees, Santa Clauses―and gingerbread houses decorated in gumdrops and candy canes. As for Easter, themed desserts aren’t as readily made. Everyone thinks of Halloween as the candy holiday, but in all actuality, it’s Easter: jelly beans, chocolate eggs, and bunny Peeps are the name of the game. But how fun is candy when you get to the Easter dinner table and find it devoid of all bunny-themed foods? Luckily for you, my grandmother has been making a bunny cake since I was a kid, and I’m not one to give up easily on themed desserts.
Peeps Easter Garden Cake
I know that I already dismissed Peeps as a lame treat (and they truly are gross), but garden cakes are always a huge hit. If you can have a graveyard cake, what’s stopping you from an Easter Bunny garden? All you’ll need is a box of chocolate cake mix (or you can make it from scratch if you’re feeling adventurous), a can of chocolate frosting to ice the cake, chocolate cookie crumbs to simulate the dirt, bunny Peeps, and green and orange decorating icing for the grass and the carrots.
Easter Trash Cookies
Just because we’ve been relegated to the Easter egg hiding committee doesn’t mean that we don’t deserve candy! Cookies are always a fan-favorite, and what better way to utilize all of the candy that you’ve hidden than to mix it with some good old-fashioned cookie dough? Just grab your regular cookie recipe, add in some candy and sprinkles, and top off your soon-to-be freshly baked cookie with a mini chocolate egg to show off that Easter spirit!
Carrot Cake Cheesecake
You obviously have to have at least one carrot-flavored thing on your “Must-Have Easter Desserts” list. Of course, you also have to have cheesecake, so why not combine the two desserts to create one incredible, carrot-y masterpiece? Just make sure to make the cake with plenty of time to spare: it takes at least four hours to refrigerate.
Nesting Baby-Bluebird Cupcakes
Cupcakes are a great dessert because they’re so portable! You can eat one outside while watching your seven-year old cousin try and climb the tree in your front yard to get the golden egg. The baby-bluebird nesting idea was my favorite because they’re adorable; they also might appeal to coconut-lovers because toasted coconut is what makes up the nest. (Other topping options include flowers, carrots, and eggs.)
Diane’s Bunny Cake
I’m now going to share with you my favorite Easter tradition: my grandma’s bunny cake. Sure, it’s really just regular cake, strawberry or white, with white frosting. She dyes coconut pink for the ears and for the bow-tie. She cuts jelly beans in half for the eyes, the nose, and polka-dots for the bow-tie as well. Then, my favorite part, she uses pull-apart cherry Twizzlers for the whiskers and the bunny’s (smiling) mouth. Granted, it isn’t the best-looking cake ever made, but it’s special and delicious and always a hit with the kids. (And me.)
