Mitchell’s takes the county

Mitchell’s Mexican Grill opened their doors in April of 2010 which brought a wave of greatness through small town, USA (a.k.a. Delphi, IN). With the depressing loss of Smitty’s tacos, Delphi had a void that needed to be filled. Owner Cory Dunbar has changed lives with his magnificent tasting cuisine. If you have tasted the life altering taste of a CBR or a frito burrito, you would agree that it would be a shame to confine their potential to the borders of Delphi. This is when you start to wonder why a food truck wasn’t around sooner.

Dunbar said, “A food truck seemed like the most logical way for us to expand because we can serve our food items to a variety of different communities.” The truck has gone as far as Lafayette and Flora, but has future plans to visit Indianapolis this summer.

Sandy Flora, a Delphi resident who works in Flora stated, “I feel that the food truck is good coming to Flora because there is not enough variety for lunch. Right now the truck is the only mexican food option.” Dunbar said, “It helps the food truck business if we park in places where ample parking is available for customers, using social media to spread the word of where we will be in advance, and allowing customers to call and text their food orders in advance.”

The truck gives Mitchell’s the opportunity to run two businesses at the same time. This is beneficial by bringing in more revenue and helps to advertise themselves to the surrounding communities.

“We have noticed an increase in new customers that have visited our shop downtown. A lot of them have mentioned hearing about our business from seeing or eating from our food truck.”

Because the truck is so new, the crew has yet to find much that has gone wrong. Other than bad weather, which is out of their control, everything else is smooth sailing.

Overall, the new truck has been a success for the relatively new and innovative business.
